Banana Bread


I am a picky banana eater.  The fruit has to be in the right consistency and ripeness, otherwise, I will not eat it.  This recipe is one of the best ways to use your over-ripe bananas.  The preparation time is very short (no mixer needed), but the cooking time is about an hour or so.

In the original recipe, it does not ask for nuts, but the bread pairs well with either walnut or almond.  Crush the nuts and sprinkle them on top of the batter when you are about to bake it.
